Gaetane Palardy

A distinguished chef and educator, Gaetane Palardy is passionate about the Comox Valley. Her knowledge of fine food, delight in conversation and passion for teaching led to the creation of Island Gourmet Trails. Over the years, Gaetane has developed excellent relationships with local producers, artisans and farmers ensuring guests a unique and personalized experience.

Dyan Spink

Dyan Spink, founder of the Royston Roasting Company and 19-year member of the Comox Valley Farmers' Market, knows her way around the Comox Valley culinary circuit. From restaurateurs to farm gates, festivals to fundraisers, she has the pleasure of calling many of the valley's growers and foodies...her friends!

Lesley Stav

Lesley Stav, is a Red Seal Chef & President of the North Vancouver Island Chefs Association (NVICA). After working in restaurant kitchens in Vancouver for over 20 years, Stav returned to Vancouver Island 12 years ago. She shifted from hands-on cooking to that of mentor, guide and passionate advocate for the culinary industry. Chef Stav spearheaded several initiatives to connect community to local chefs, farmers, fishers & producers.
